This season marks a new chapter for the restaurant. Inspired by the curious spirit of Sir Kenelm Digby and his celebrated work The Closet of the Eminently Learned Sir Kenelm Digby, Digby introduces a renewed culinary identity centred around three defining elements: Sea, Land and Fire.
Led by Chef Andrea Cardoso, the menu reinterprets Portuguese culinary heritage through a contemporary, internationally inspired lens. Seasonal ingredients, refined techniques and creative craftsmanship come together in a sophisticated dining experience that is both innovative and deeply rooted in a sense of place.
Alongside the restaurant's new concept, Digby also introduces a new Pool Menu, offering a lighter selection designed for relaxed summer afternoons beside Torel Avantgarde's infinity pool.
